Florence Fennel – Finocchio

A very versatile herb. Its leaves, stalks, seeds, roots, and plant base (or “apple”) are all used. It is grown as an annual for its delicious tender apple which can be eaten raw or blanched along with its stalk when young. Its leaves and seeds have an anise like flavor. Approximately 45 to 90 days to maturity.

SOWING: Sow seeds directly outdoors after danger of severe frost has passed. Cover seeds with 1/4 inch of fine soil. Continue sowings through the fall.

THINNING & SPACING: Thin seedlings 8 to 12 inches apart when 2 to 3 inches tall..

GERMINATION: 12 to 18 days. Keep soil moderately moist during germination.

Ed’s Special Advice: Select a sunny location with fairly rich well drained soil.  Hill soil up around plant base to cover and blanch.  Water moderately and sow seeds at 2 to 4 week intervals for successive crops.  Pull plant prior to flowering, when base is 3 to 6 inches in size.  Leave plants to fully mature to harvest seeds.
