Delicious and easy to grow, this top quality Chinese mustard is slower to bolt than standard varieties. Pak Choi is crisp in texture and sweet and mild in flavor. Excellent in salads, soups and stir-fry. Approximately 49 days to maturity.

SOWING: Sow seeds directly into the garden in early spring through mid spring and again in the fall. Cover seeds with 1/8 inch fine soil firmed down.

SPACING: Space rows 18-24 inches apart depending upon available space.

THINNING: Thin to 16-18 inches apart in the row.

GERMINATION: 5 to 10 days. Keep soil moderately moist during germination.

Ed’s Special Advice: Pak Choi grows best in the cooler parts of the growing season in moist rich soil. Protect from insects with cheesecloth or agricultural fabric. Cut outer stalks as plants grow or cut entire plant at the base. Center stalk can also be harvested to help force growth to outer leaves.

SEED SAVING: Allow seed pods to fully ripen and dry before harvesting. Store in a cool, dry place.
